How to Make Herb Infused Honey
Here’s how to make an herb infused honey;
Slice the ginger thinly to release its full flavor. Crush the dried orange peel and chamomile flowers slightly with a wooden spoon.
Fill a clean jar a little less than halfway with the crushed orange peel and chamomile.
Add the sliced ginger to the jar, spreading it evenly.
Pour the raw honey into the jar, ensuring all the herbs and citrus are fully submerged. Use a spoon to stir gently, removing air bubbles.
Seal the jar with a tight-fitting lid and place it in a sunny windowsill, if you can. (I don’t have one and it works just fine without).
Every two days, turn the jar over to redistribute the ingredients. Let the honey infuse for at least 2-3 weeks for maximum flavor.
Once the infusion is complete, warm the jar gently in a double boiler over medium heat to make straining easier. Be careful not to get it too hot or you destroy the beneficial properties of honey.
Using a fine mesh sieve, strain out the herbs and citrus.
Transfer the honey to a clean jar, seal it tightly, and store it in a cool, dark place.
