Homemade Lavender Ice Cream Recipe
There’s something about making ice cream at home that just feels special. Especially in the summer!
One of my favorite things is pulling a container of homemade lavender ice cream out of the freezer on a warm evening. It’s soft, creamy, and just lightly floral that it tastes amazing.
If you’ve never tried lavender ice cream before, don’t worry. I know it sounds a little unusual at first. But when it’s made with the right kind of lavender, it’s actually slightly sweet and is delicious!
The lavender pairs beautifully with honey and vanilla, which makes the flavor smooth and comforting. It’s a little different than typical ice cream, but not in a bad way.
The good news is this lavender ice cream recipe homemade version is incredibly simple. You don’t need an ice cream machine, and you don’t need any fancy equipment either. It’s actually a no churn lavender ice cream, which means you just mix everything together, freeze it, and let time do the rest!
And once you try it, you might find yourself making it every summer like I do!

Before we start though, let’s talk about the lavender for a minute.
If you’re cooking with lavender, it’s really important to use culinary lavender. This type of lavender is grown and prepared specifically for food. It has a softer flavor compared to ornamental lavender, which can sometimes taste too strong.
Using the right dried lavender buds makes all the difference when you’re making a lavender dessert like this.
Lavender has also been used for centuries in herbs for health, especially when it comes to calming the body and helping people relax. We’re just enjoying it as a dessert here, but I always love cooking with herbs that have such a long history!
Now let’s make some ice cream!!

- 1/4 cup whole milk
- 1 teaspoon dried lavender buds (food grade culinary lavender)

How To Make Lavender Honey Ice Cream
Warm the milk over medium-low heat in a small pot.

Once the milk starts to simmer, turn the heat to low, then add the lavender buds. Simmer for 5 minutes.

Once chilled, strain the lavender milk with a small sieve to remove the buds.

Beat the heavy cream on high for 3 to 5 minutes, until soft peaks form in a stand mixer, or in a large bowl with an electric mixer.

Fold in the sweetened condensed milk.

Gently stir in the lavender milk and honey.

Pour the mixture into a bread pan and cover with plastic wrap. Freeze for 6 to 8 hours, or overnight for best results.

That’s it. You’ve just made homemade lavender honey ice cream.

A Few Helpful Tips
A couple small things can make a big difference when making homemade ice cream:
- Don’t simmer the lavender too long or the flavor can become too strong!
- Make sure to strain the lavender well so the texture stays smooth. I sprinkled some on top for the pictures, but you don’t have to!
- Whip the cream to soft peaks, not stiff peaks.
- And if you can, freeze the ice cream overnight. It makes the texture much creamier. We prefer that even though waiting for it is hard!
Making homemade ice cream can feel a little intimidating the first time you try it. But once you do it once, it starts to feel really simple!
