Homemade Elderberry Popsicles Recipe

We use elderberry syrup all the time during the winter months. However, I wanted something more fun and convenient for my kids during summer. So I created an homemade elderberry popsicles recipe and it did not disappoint!

I think we enjoyed one a day for the entire summer so far haha, they are that good!

Elderberry has been used for centuries across European and Native American traditions as a go-to herb for immune support, especially during cold and flu season. We love our homemade elderberry syrup, and even these DIY elderberry gummies too!

Families have been reaching for it in syrups, teas, and tinctures for generations, and honestly, the tradition makes so much sense once you start learning about it.

These DIY elderberry popsicles are my fun little twist on that same idea: a simple, two-ingredient treat that works hard while it tastes great!

Whether you’re trying to make wellness feel less like a chore for your kids (or yourself!), or you just want a refreshing treat that does a little something extra, this homemade elderberry popsicle recipe is genuinely as easy as it gets. Two ingredients, a few minutes of prep, and a few hours in the freezer. That’s it 🙂

Herbal Benefits

  • Elderberry syrup is the real star here. Elderberries (Sambucus nigra) have a long history of traditional use for supporting the immune system, particularly during seasonal illness.

    They’re rich in antioxidants, especially anthocyanins, which give them that deep, gorgeous purple color, and have been used traditionally to help the body respond to colds and respiratory bugs.

    Using elderberry syrup (homemade or a good store-bought version) means you’re packing all of that goodness into every single pop.
  • Sugar-free juice: Depending on which variety you choose, it brings its own set of benefits. Grape juice, especially Concord, is loaded with polyphenols and antioxidants.

    Apple juice brings a mild sweetness plus some natural vitamin C. A mixed berry blend adds even more antioxidant support!

DIY Elderberry Popsicles Recipe

Makes: 6 popsicles

Ingredients

  • 6 tablespoons elderberry syrup
  • 2 cups sugar-free juice (grape, berry blend, apple, or your favorite variety, I used apple)

Instructions

In a measuring cup or bowl, whisk together the elderberry syrup and sugar-free juice until well combined.

Pour the mixture evenly into a 6-pop popsicle mold.

Insert the sticks and freeze for at least 4-6 hours, or until completely frozen.

To release the popsicles, run the mold under warm water for a few seconds.

Notes

  • Concord grape juice, mixed berry juice, or apple juice all pair well with elderberry syrup.
  • For a creamier popsicle, replace ½ cup of the juice with coconut milk!
  • Add fresh berries or sliced fruit to the molds before freezing for extra flavor and texture 🙂
  • Homemade elderberry syrup can be used in place of store-bought syrup.
  • This is NOT for babies as elderberry syrup has honey.

How to Use It

These popsicles are a wonderful way to work elderberry into your family’s routine, especially during the warmer months.

One popsicle per day is a totally reasonable amount for kids and adults alike, though always check with your pediatrician if you have little ones under two. This is NOT for babies as elderberry syrup has honey.

Store them right in the mold in your freezer for up to 2 months (trust me, they never last that long in our house)!

If you want to pop them out and store them loose, wrap each one individually in plastic wrap and keep them in a zip bag.

Pregnant or nursing mamas should check with their provider before using elderberry regularly, and anyone on immunosuppressant medications should do the same.

Final Thoughts

These have genuinely become a STAPLE in our freezer all summer long, but I am sure we will keep some for winter too, because why not 🙂

My boys think they’re getting a treat (and they are!), and I feel good knowing there’s some real wellness built in.

If you try these, I’d start with the classic juice-only version first, then experiment with the coconut milk twist. Drop some fresh blueberries in the molds before you pour, it makes them look like something from a fancy popsicle shop.

You’ve got this, even if your “kitchen” is a small apartment counter like mine was for years!
